  • 1½ lb boneless, skinless chicken thighs
  • 3 tbsp all-purpose seasoning
  • 1 tsp black pepper
  • 1 tsp pink salt
  • For Browning the Meat:
  • 1½ tbsp olive oil
  • 2 tbsp raw cane sugar
  • To Cook the Rice:
  • 2 tbsp olive oil
  • 1½ tbsp curry powder
  • 1 medium onion, chopped
  • 2 scallions, chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 large carrot, chopped
  • 1 cup kale, tightly packed
  • 6 sprigs of thyme
  • 1 tbsp chadon beni
  • 1½ cups brown rice
  • 2½ cups chicken stock
  • 1 scotch bonnet pepper (optional)
  • Season the Chicken:
  • Place the chicken in a bowl and season with all-purpose seasoning, black pepper, and pink salt.
  • Brown the Chicken:
  • Heat oil in a large non-stick pot over medium heat. Add sugar and stir until it darkens, then add the chicken. Cook until browned, about 15-20 minutes. Increase heat to evaporate juices.
  • Cook the Vegetables:
  • Add more oil if needed, then sauté onions, scallions, and garlic until soft. Add bell peppers, carrots, and kale, cooking until they soften.
  • Cook the Rice:
